Wagyu for you: Understanding the Japanese Wagyu market
Ian Clifton, better known as Harry, runs a commercial Angus cattle herd with his family, on their 12,000-acre property "Keronga", near Coonabarabran. Harry specialises in using Wagyu bulls over his Angus females, to create a crossbred or F1 steer, destined for the Japanese market.
In this episode, Harry explains how his pastures, like slender leaf serradella, have helped his less productive soil types to pull their weight. He also breaks down the Wagyu market across seasons, thanks to his eight years of experience in the enterprise. Finally, Harry discusses the importance of relationships in his business, and what this means in the Japanese Wagyu market.
