Catalin Varela is a 22 year old college grad with Celiac, now living in Italy working as a gluten free travel consultant and pasta making teacher! She shares her best tips for traveling with Celiac including which countries in Europe she's found to be the easiest to eat safely and well.
Catalin (aka Celiac in Italy) has her bachelor’s degree in Health Arts and Sciences focused on applying medical anthropology theories to the understanding of celiac stigma. She spent six months traveling through Europe while writing her thesis about how cultures approach gluten free eating differently and the effect that has on the quality of life for celiac patients.
During her travels, Catalin fell in love with Italy and decided to make the move from Denver to Florence. Living in Italy as a celiac has changed her perspective on her medically necessary gluten free diet entirely, and so she feels inspired to speak with and empower other celiacs.
