Mariana Fernández-Fígares is a medical student who is also studying the Nutrition and Dietetics degree in Spain. She became interested in nutrition at a very young age, when she was 11 because she was diagnosed with a lymphoma. Since then, Mariana has been learning about evidence based nutrition, with a particular focus on plant based diets. She became vegan when she was 15.
Her first scientific article has been recently published in Nutrition Reviews, one of the most important nutrition scientific journals in the world. Its a review article about the role of a healthy plant based diet for the prevention and treatment of type 2 diabetes. She's working on new scientific articles about healthy plant based (vegan) diet on disease prevention and reversal.
In this interview Mariana explains the potential of a healthy plant based diet in the prevention and treatment of type 2 diabetes and why it is the dietary pattern that results in the best health outcomes according to scientific evidence. She discuss how animal based low carb diets, that are usually prescribed to diabetes patients, can increase insulin resistance, alter blood lipids and have shown to be associated with higher risk of cancer, diabetes, cardiovascular disease and mortality.
