School of Lunch Founder, Hilary Boynton is the mother of 5, author of The Heal Your Gut Cookbook and the Head of Nutrition Services at The Manzanita School in Topanga, CA. After seeing the power of food as medicine, and surviving a cancer diagnosis within her own family, she passionately dove into the challenge of solving school lunches where disease prevention begins. Rolling up her sleeves and becoming the Lunch Lady herself, she created a program implementing nutrient-dense, ancestral based, locally sourced and seasonal foods. She also brought in farmers and food producers to teach students where their food comes from and why they should be eating it! The Manzanita model is now spreading across the country and has led to the launch of the ‘School of Lunch’ Training Academy, an intensive immersion program.
In today’s episode, Hilary and I discuss her efforts to “reinvent” school lunches to ensure that they are nourishing for our growing kids. She teaches not only the importance of fermented foods and local produce and meat, but also the importance of having the students involved to get them excited about healthy living!
