Dr. Niki Davis will be making both apple and blueberry Easy Oat Muffins! An easy and delicous recipe, perfect for fall and winter weekend mornings! Also great for a healthy snack!
Recipe:
Ingredients:
3 cups oats
1 1/2 cup plant milk
2 ripe bananas, mashed (about 3/4 cup)
1/3 cup date sugar
Egg replacer for 2 eggs
1 tsp baking powder
1 tsp ground cinnamon
1 tsp vanilla extract or powder
1/2 tsp salt (optional)
1 cup fresh blueberries or fresh chopped apples
Directions:
Preheat oven to 375 deg F.
Combine oats, plant milk, bananas, date sugar, egg replacer, baking powder, cinnamon, vanilla, and salt into large bowl. Fold in blueberries or apples. Divide mixture between muffin cups (about 1/3 cup each). Bake until a toothpick inserted into the center comes out clean, about 25 minutes. Cool in the pan for 10 minutes, then turn out onto a wire rack. Serve warm or at room temperature.
To make ahead: Wrap airtight and refrigerate for up to 2 days or freeze for up to 3 months.
