Today’s This...I...Do...For...Me: Over 50, Black and Fabulous is Carolyn Davenport Moncel, who shares with us what it has been like living as an Expatriate in Geneva, Switzerland. She believes it is never too late for a 50+ year old to live and create a life abroad. She speaks extensively about how she has lived her dreams in both France and Switzerland, and she dispels several myths about how African Americans are received abroad.
A virtual media and web consultant by day and author by night, Carolyn moved to Paris from Chicago, her hometown in 2001. In Paris, she started the very first English-Speaking Virtual Assistance firm. Known for her online articles and media relations, Moncel owns MotionTemps, a digital project and web content management firm with offices in Chicago, Paris and Geneva. She currently splits her time between digital marketing development at the Geneva Centre for Security Policy and MotionTemps.
She has written a book of fiction entitled “Encounters in Paris” and two collections of short stories entitled “5 ReDons to Leave a Lover” and Railway Confessions.”
“I started writing because I realized that it’s very difficult for me not to tell a story. I come from a family of story tellers, so I’ve heard some sort of tale all of my life.”
Carolyn’s latest and exciting venture is as Souperlicious-In-Chief at Simply Souperlicious! “As a busy single mom of two children (one teen and one new adult), finding time to put healthy and fast meals on the table hadn’t always been easy”, states Carolyn.
In the “Simply Souperlicious Story,” Carolyn talks about how she wanted to make changes in her diet and lifestyle for her and her family. Carolyn has identified five areas of change that are needed to create a new lifestyle.
1) Learning how to,prepare soup of all types — the education continues;
2) Setting aside time for food prep, cooking and storage of two soups per week;
3) Learning how to prepare meals using only local fruits and vegetables in season;
4) Challenging herself to try new fruits and vegetables that she would never ordinarily eat;
5) Integrating one soup meal into the family’s diet at least three times per week
The result according to Carolyn has been cleaner eating, and as a result, she lost 40 pounds in six months. She and her family are eating better, and she firmly believes that everyone can make great soup!
